    Pampas Amazing Oxtail Stew Recipe:

    Ingredients

    1kg Oxtails (approx) 4 x Carrots 1 x large Onion 1 x Celery stick 2 x Garlic cloves 2 x Bay leaves 1 x Star anise 500ml Beef stock 200ml Red wine 1/2 x tablespoon Worcestershire sauce 1 x tablespoon Tomato puree 1 x tablespoon Flour 1 x tablespoon Cornflour (added at the end of cooking time) 1 x knob of Butter (optional)

    Method:

    Place Oxtails in a bowl and add the flour, salt and pepper and mix well until the Oxtails are well coated. Heat a pan, add a little oil and brown off the Oxtail pieces until well coloured, transfer to slow cooker. Slice and chop vegetables; then In the same pan as before add the garlic, onion, celery and carrot, cook until the vegetables start to soften and then add 1 tablespoon of tomato puree to the mixture, cook for a further minute. Add vegetables into slow cooker with the Oxtails. De-glaze the pan with 200ml of red wine to remove all those flavoursome bits stuck to the bottom of the pan. Reduce slightly and then transfer liquid onto the Oxtails and vegetables in the slow cooker. Add 500ml of beef stock to the slow cooker along with the bay leaves, Worcestershire sauce, star anise and any remaining flour from the 1st stage bowl. Cook on ‘HIGH’ for 4 hours or ‘LOW’ for 8 hours, until the Oxtail is falling off the bone. (Spoon off any excess fat if required). In a small pot mix the cornflour with some water and then add to the slow cooker to thicken the sauce. Add a knob of butter to give the sauce a lovely gloss. Add salt and pepper to taste. Finally, serve on a bed of mashed potatoes. Place the oxtails on top and spoon over the delicious thick meaty gravy.
