This is the full rack of ribs, weighing approximately 4.0 - 6.0 kilos and feeding between 8/10 people. This cut needs to be barbecued on a large grill rib side facing the heat or on a metal cross asado style. In Argentina,the fire is built first around the meat and allowed to burn down till the ash goes white. The meat has a good marbeling of fat so will protect it from going dry. Known in Argentina as Asado de Tira or Tira de Asado. The beef equivalent of spare ribs, only larger and beefier! Also known as Jacobs Ladder or Short Ribs
Cooking Tips: Just, salt the meat well prior to barbecuing and then leave to cook. Once the meat and fat are crispy and golden, take a sharp knife and slice a piece off to reveal the pink, tender and juicy flesh. Now just serve with a fresh palmito salad and a glass of fine Malbec.
