How to cook Iberico Pork Rack? Fully French trimmed by our expert butchers, your meat is ready to go. Defrost overnight, bringing to room temperature. Then lightly brush in olive oil and season. Now pop in a hot oven 180-200ºC for 20-25 minutes maximum and let rest.
