Topside steak with thyme, garlic and bay leaves

Ingredients (4 Servings)

  • 4 400g Argentine Topside steaks
  • Cooking salt
  • Extra virgin olive oil
  • 1 thyme bunch
  • 4 bay leaves
  • 5 sliced garlic cloves
  • Ground black pepper


Method

Heat a cast-iron frying pan on a very high heat. Season the beef with the cooking salt and olive oil. Place the thyme, the bay leaves and the sliced garlic on both sides of the beef. Cook the steaks in a frying pan for 6 minutes undisturbed. If necessary, lower the heat to mid-point after the first 2 minutes until the beef is brown

Turn over the steaks and cook for a further 4 minutes, undisturbed. Season with the freshly ground black pepper and sprinkle cooking salt over them when serving. They can be served with baked potatoes.
